After analyzing the strengths and weaknesses of the business, the company decided to concentrate on the production of single-portion cakes and changed its name to Pâtisserie Chevalier inc.
In 1992, a major investment became necessary. In order to meet the constantly growing demand, a new location was required for a second production line. As bad luck would have it, a fire destroyed the new facilities only eight weeks after the start of operations. Everything had to be rebuilt from scratch. The Chevalier brothers decided to use this trial as a stepping stone and precipitated the construction of a modern plant bringing all of the company's activities under one roof. Fortunately, as the quick growth of the company had already been anticipated, the building of the present site on Industriel Blvd. in Shawinigan-Sud began as of 1993. From 1995 to 2001, three major extension projects took place. This included adding a modern warehouse and setting up another production line.

Today,
Pâtisserie Chevalier inc. manufactures a wide range of cakes and supplies
large food chains across Quebec, Ontario and the Maritimes. A constant concern
for quality and the continuous development of new, original products greatly
contribute to the success of the business. The company is the second largest
manufacturer of individually wrapped cakes on the Quebec market, and has
made a considerable impact on the economy of the Mauricie region.
